Melt 4 tablespoons of butter in a skillet.

Add 1/2 of a medium onion to the skillet and sauté until the onion is clear.

Combine 3 cups of cooked squash (drained and squeezed of water) with the sautéed onion.

Add 1 cup of crushed Ritz crackers to the squash mixture, saving some for the top.

Mix in 1/2 cup of sour cream.

Add 1/2 teaspoon of salt and 1/4 teaspoon of pepper to the mixture.

Stir in 1 cup of grated cheddar cheese.

Transfer the mixture to a 9x13 inch baking pan.

Optionally, top with additional crushed Ritz crackers.

Bake at 350°F for 25 to 30 minutes.
