Tofu is a plant-based protein, while ground pork is often less expensive than beef.

1

Start by rinsing 1.5 cups of rice until the water runs clear.

2

Add 1.5 cups of water, 1 square of Toshima, and a pinch of salt to the rice cooker or stovetop pot.

3

Slice 0.5 zucchini into 1 centimeter wide slices.

4

Slice 1 whole carrot into 1 centimeter wide fry shapes.

5

Prepare spinach by cutting off the ends to avoid tangling.

6

Slice a handful of perilla leaves and set aside.

7

Tear baby oyster mushrooms apart without cutting them.

8

Heat neutral oil in a pan on medium-high heat.

9

Add zucchini fries to the pan and sprinkle with salt.

10

Once fragrant and crisp, remove zucchini from the pan and set aside.

11

Wipe leftover oil from the pan and add new oil for the carrots.

12

Sprinkle salt on the carrots, using less than for the zucchini to retain sweetness.

13

Once cooked, place carrots next to zucchini on the plate.

14

Boil water in a pot and add spinach, tossing for about 30 seconds.

15

Wash spinach in ice water to prevent overcooking, then squeeze lightly to remove excess water.

16

Mix spinach with 1 spoon of sesame oil and a pinch of salt, then plate it.

17

Bring a fresh pot of water to a boil and add mushrooms, cooking for 2-3 minutes.

18

Cool mushrooms in ice water, squeeze lightly, and mix with 1 spoon of sesame oil and a pinch of salt before plating.

19

Bring another fresh pot of water to boil and add bean sprouts, cooking for 1-3 minutes.

20

Cool bean sprouts in ice water, then mix with sesame oil and salt before plating.

21

In a clean pan, heat oil and add 2 cloves of minced garlic, stirring to avoid chunks.

22

Add 1 spoon of sesame oil, 1 spoon of soy sauce, 1 spoon of sugar, and 1 spoon of water to the garlic, stirring until combined.

23

If too sweet, adjust with more soy sauce and salt until balanced.

24

Pack cooked rice into a small bowl and flip it into the center of a larger bowl for plating.

25

Arrange vegetables around the rice to create a colorful presentation.

26

Create a divot in the rice and place an egg yolk on top for decoration.

27

Sprinkle toasted sesame seeds on top of the dish.

28

For an optional pork belly topping, cut pork belly into 2 centimeter wide slices and cook in a pan until crispy.

29

Place cooked pork belly on top of the rice and garnish with perilla leaves.

30

Mix 1 spoon of red pepper paste with a little less than 1 spoon of sesame oil for the sauce.

31

Serve the sauce on top of the bibimbap and mix well before enjoying.
