Take 500 grams of boiled and slightly mashed chickpeas, ensuring they are not pureed but have a slightly mashed texture with little pieces.

3

Add half a bunch of coriander, half a bunch of mint, the white part of 1 spring onion, and 1 cup of the green part of spring onion to the chickpeas.

4

Add 1 tablespoon of crushed garlic, 1/4 teaspoon of white cumin powder, 1 tablespoon of salt, 1/2 tablespoon of red chili powder, and 1 tablespoon of slightly crushed black pepper to the mixture.

5

Add 5 tablespoons of bread crumbs, 2 tablespoons of sesame seeds (optional), 2 tablespoons of lemon juice, and 3 tablespoons of sesame oil to enhance flavor.

6

Mix all the ingredients well and then cover the mixture and preserve it in the fridge for half an hour to prevent the vegetables from releasing water.

7

After half an hour, take the mixture out of the fridge and shape it into patties.

8

Heat oil in a pan on medium-low flame and carefully place the patties into the oil without moving them immediately.

9

Once they are golden brown on one side, carefully flip them over using soft hands to avoid breaking them.

10

Shallow fry the falafel until they are golden brown on both sides, then remove them from the oil and place them on a plate.
