In a large bowl, add 1.5 cups of self-raising flour and 0.5 cups of plain flour.
Add 1 teaspoon of salt, 0.5 teaspoons of baking powder, and 0.5 teaspoons of baking soda, and mix well until combined.
Grate in 1/3 cup of cold shortening and mix until no large chunks are visible.
Mix in 3/4 cup of sharp cheddar cheese until well combined.
Add 3/4 cup of cold water and 1/4 cup of buttermilk, mixing gently until just blended.
Using a 1/4 cup measurement, portion the mixture onto a baking tray lined with baking paper.
Bake in a preheated oven at 220 degrees Celsius (425 Fahrenheit) for 14 minutes or until lightly golden brown.
While the biscuits are baking, make the garlic butter spread by combining 1/4 cup of melted butter, 1 teaspoon of garlic powder, 1/4 teaspoon of salt, 1/4 teaspoon of onion powder, 1/4 teaspoon of dried parsley, and 1/8 teaspoon of super fine sugar in a bowl and mixing until well combined.
When the biscuits come out of the oven, use a brush to spread the garlic butter over the top while they are still warm and serve immediately.
