Mix 1 teaspoon of fine grain salt, 3 cups of all-purpose flour, 1/2 cup of sugar, and 2 teaspoons of yeast in a bowl.
Add 1 cup of warm water and 3 tablespoons of oil, mixing until a dough forms.
Knead the dough in the bowl for about a minute, then transfer to the counter and knead for an additional 3 minutes.
Coat the dough in oil, cover with a damp kitchen towel, and let it rise in a warm place for 1 to 1.5 hours.
Peel and shred 3 apples.
In a small saucepan, combine 1/2 cup of oil, 1/2 cup of honey, 1/2 cup of packed brown sugar, and 1 teaspoon of pure vanilla extract over low heat, whisking until smooth for about 30 seconds to a minute.
Remove from heat and stir in 1/2 cup of coconut milk and a pinch of salt, mixing until combined.
Roll the risen dough out into a 24 by 12-inch rectangle.
Drizzle honey over the dough and spread the shredded apples on top, leaving a 1-inch border.
Add tart cherries on top of the apples.
Roll the dough tightly from the long side like a jelly roll.
Slice the rolled dough into 16 equal pieces.
Place the slices in a 9x13 baking dish lined with baking paper and pour the cooled syrup over them.
Bake in a preheated oven at 350°F for about 30 minutes until lightly golden and bubbly.
