Prepare 5 oz of sushi rice earlier and let it cool.
Lay a nori sheet on a bamboo sushi mat, shiny side down.
Place a large ball of sushi rice on top of the nori sheet.
Cut cucumber in half, remove the core, and slice into four pieces.
Tuck and roll the sushi like a burrito, but smaller.
Lay slices of broiled eel to the side, angling them for presentation.
Cut the eel into four slices.
Use a non-stick cutting board to prevent the rice from sticking while rolling.
Reshape the roll and tuck the ends in to secure it.
Lightly torch the eel to heat it and release the fats without charring.
Drizzle the roll with unagi sauce and sprinkle sesame seeds on top.
Slice the roll into eight pieces.
