Homemade Snickers

Cultural Context

The Snickers bar, created in 1930 by Frank Mars, has become a beloved American candy bar featuring layers of nougat, caramel, and peanuts, all coated in chocolate. Its rich combination of flavors and textures has made it a staple in candy aisles across the globe. Homemade versions allow for customization, such as using natural ingredients or adjusting sweetness, catering to modern dietary preferences while retaining the classic taste.

1

Begin by separating the yolk from 1 large egg to get just the egg white.

2

Use a hand mixer to beat the egg white until stiff peaks form.

3

In a saucepan, combine 2/3 cup white granulated sugar, 1/4 teaspoon salt, 1 tablespoon water, and 1/3 cup corn syrup.

4

Heat the mixture over medium heat until it reaches 255 to 260 degrees Fahrenheit, stirring occasionally.

5

Once the sugar mixture reaches the correct temperature, slowly drizzle it into the beaten egg whites while mixing.

6

Continue mixing for about 30 seconds to a minute until combined.

7

Spray two bread loaf pans with cooking spray and evenly distribute about a third of the nougat mixture into each pan.

8

Chill the nougat in the fridge for at least 4 hours or overnight until firm.

9

Melt 30 Kraft caramels with 1.5 to 2 tablespoons of heavy whipping cream or whole milk in the microwave in bursts of 25 to 30 seconds, stirring in between until melted.

10

Add 3/4 cup slightly salted roasted peanuts to the melted caramel and mix well.

11

Spread the caramel mixture over the chilled nougat in the loaf pans and return to the fridge for 20 to 30 minutes to firm up.

12

Once the caramel is set, remove the nougat from the pans and cut it into pieces.

13

Melt 1/2 bar of candy coating and 1 cup of Ghirardelli milk chocolate chips in the microwave in bursts of 30 seconds, stirring until smooth.

14

Dip each piece of nougat into the melted chocolate, using a fork to lift it out and tapping off excess chocolate.

15

Place the dipped pieces on a sheet pan lined with parchment paper or a silicone baking mat.

16

Return the dipped Snickers to the fridge until the chocolate sets, about 30 minutes.

17

Trim the edges of the Snickers for a cleaner look, if desired.
