Coconut Panna Cotta

Cultural Context

Originating from Italy, panna cotta translates to 'cooked cream' and is a classic dessert known for its silky texture. Traditionally made with cream, this coconut variation reflects the influence of tropical flavors, making it a popular choice in many modern dessert menus. Today, panna cotta is enjoyed worldwide, often customized with various flavors and toppings.

4 servings
Servings4
1 cup coconut milk
1 cup heavy cream
1 cup fresh pineapple, chopped
1/2 cup castor sugar
1/2 cup chopped tender coconut
2 teaspoons gelatin
mint sprigs for garnish
1 teaspoon vanilla extract

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Take some cream in a deep bottom pan.

2

Add milk to the cream, ensuring not to boil it but just to cook it gently.

3

In a separate bowl, add gelatin and water, then microwave for 30 seconds to 1 minute until warm.

4

Check the cream; it should be warm but not boiling. Add a few drops of vanilla essence.

5

Turn off the flame once the cream is warm.

6

Mix in castor sugar (if using unsweetened cream) until dissolved.

7

Add chopped tender coconut to the mixture.

8

Add the warmed gelatin mixture, ensuring no lumps remain. If there are lumps, strain the mixture and return it to the bowl.

9

Transfer the mixture into short glasses or a larger glass to set.

10

Refrigerate for a minimum of 4 hours, preferably overnight.

11

For the pineapple coulis, take roughly chopped pineapples in a pan.

12

Add a little castor sugar to the pineapples and cook them in their own juices.

13

After about 10-15 minutes, the pineapples should soften. Cook for an additional 20-25 minutes until pulpy.

14

If in a hurry, pulse the mixture for 2-3 times to achieve a chunky yet smooth consistency.

15

Once the coulis is ready, let it cool to room temperature while the panna cotta sets in the refrigerator.

16

After 4 hours, check the panna cotta; it should be set.

17

Present the panna cotta by adding the pineapple coulis on top and garnish with mint sprigs.
