1 ½ Cups Julienned Green Papaya
2 Cloves Garlic
1 Tsp Chopped Thai Chilies
1 ½ Tbsp Grated Palm Sugar
2-3 Long Beans (cut into 2-inch pieces)
3 Tbsp Roasted Peanuts
1 Tbsp Dried Shrimp
2 Tbsp Fresh Lime Juice
2 Tsp Tamarind Juice
1 ½ Tbsp Fish Sauce
½ Cup Cherry Tomatoes
Ice Cubes
Water

In a bowl, add water, ice cubes and grated papaya, mix well. Keep aside for 15-20 minutes.

Drain and keep aside in a bowl.

In a mortar pestle, add chillies, garlic and crush it.

Add palm sugar and mix well using pestle, until dissolved.

Add the beans, crush them well.

Add dried shrimps.

Add half of the peanuts and crush it.

Add fish sauce, tamarind juice.

Add lemon juice and lemon skin and crush them all.

In a bowl, add papaya, tomato, half the peanuts and dressing, mix well. Serve immediately.
