It combines the traditional momo dumplings with a flavorful broth, creating a comforting meal that reflects the region's culinary heritage. This dish has gained popularity beyond Tibet, with variations found in neighboring regions and among Tibetan communities worldwide.

Soak the dumpling skin in hot water for a few minutes or boil for 30 seconds until soft.
Blanch the spinach for a few minutes until soft, then transfer to cold water and remove excess water before chopping.
Mix the chopped spinach with the filling ingredients of your choice.
Heat oil in a pan, then add minced garlic and chopped spring onions, frying for a few minutes until fragrant.
Add 2 tbsp soy sauce, 1 tsp black pepper, 1 tsp salt, and 1/2 tsp sesame oil to the pan and mix well without cooking further.
Prepare the dumpling skins by adding the filling and pinching the edges with water to seal.
Boil the dumplings in water for 2 minutes until the skin is cooked and the filling is heated through.
Prepare the dipping sauce by mixing coriander leaves, garlic, chili sauce, 2 tbsp vinegar, 1 tbsp sesame oil, 3 tbsp soy sauce, and 2 tbsp water.
