1

Pick out any bad beans from the white beans.

2

Rinse the beans under water and put them in a pot with water.

3

Add a bouquet garni, ham shoulder, bay leaf, and cloves to the pot.

4

Tie the bouquet garni with cooking string to make it easier to remove later.

5

Add salt to the pot, immerse the beans, and bring to a gentle boil.

6

Lower the heat, cover the pot, and simmer for 1.5 to 2 hours until beans are tender.

7

Prepare the duck by inserting garlic cloves into it and seasoning with salt and pepper.

8

Place the duck in the oven at 400°F for about 1 hour.

9

After an hour, pour out the fat from the duck and return it to the oven for another 30-40 minutes.

10

Remove the duck from the oven, let it cool slightly, and chop it coarsely before adding it back to the beans.

11

Make a homemade sausage with ground pork, salt, pepper, garlic, pumpkin seeds, and red wine.

12

Form the sausage mixture into a shape without using casings, wrap it tightly, and refrigerate for 48 hours.

13

Poach the sausage in the beans for about 25-30 minutes.

14

Cut the duck into pieces for serving.
