Prepare ingredients: cut up the whole chicken, remove skin, and set aside.
Gather 500 grams of Italian sausage and 500 grams of pork sausage.
Chop 2 cloves of garlic and set aside.
Measure out 1.5 teaspoons of whole peppercorns.
Cut 6 pieces of smoky bacon in half and set aside.
Prepare whole shallots, 2 sticks of celery, and 2 carrots, eyeballing the amounts.
Measure out 3 tablespoons of tomato paste and 3 cups of chicken stock.
Pour about 0.5 cup of white wine and some olive oil into the skillet and heat it up.
Add the chicken pieces to the skillet and cook until they have a nice color.
Add the chopped garlic and toss it with the chicken.
Add the smoky bacon to the skillet and move it around to cook.
Deglaze the pan with the white wine and let it reduce to remove alcohol smell.
Stir in the tomato paste and let it cook a bit to combine flavors.
Add the whole peppercorns, celery, and carrots to the skillet and mix gently.
Pour in 3 cups of chicken stock and stir to combine all ingredients.
Add the beans of your choice and sprinkle fresh parsley on top.
Bring the mixture to a gentle boil before covering it with a lid.
Transfer the skillet to a preheated oven at 180 degrees Celsius for about 1 hour and 15 minutes.
After cooking, check the dish for flavor and adjust seasoning if necessary before serving.
Sprinkle fresh parsley and Parmesan cheese over the dish before serving.
