Pat the whole trout dry with kitchen paper and place it on baking paper in a tray.

Mix lemon thyme with salt, pepper, and extra virgin olive oil.

Brush the outside and inside of the trout with the seasoning.

Fill the inside of the trout with 3 slices of lemon, 2 bay leaves, and 3 whole cloves of garlic.

Bake the trout in a medium oven for about 30 minutes, basting the fish with olive oil a few times during cooking.

Dice an apple and place it in a bowl with the juice of half a lemon, 3 tablespoons of olive oil, 2 tablespoons of chopped walnuts, and a little salt and pepper.

Cook 2 rashers of bacon in a pan until crispy.

Once the fish is cooked, transfer it onto a large platter and spread the walnut and apple dressing on top.

Scatter the bacon pieces over the top of the fish.
