1 onion
2-3 cloves garlic
300g mushrooms
300g potatoes
1 litre vegetable stock
150ml cream
butter
olive oil
salt
pepper

Finely chop 1 onion.

Toast the onion in a little butter for several minutes.

Finely chop 2-3 cloves of garlic and add to the onion.

Chop 300g of mushrooms and 300g of potatoes.

Add 1 litre of vegetable stock to the pot.

Cover with a lid and simmer gently for 30 minutes.

Slice some fresh bread and drizzle with olive oil.

Toast the bread until golden-brown.

Thinly slice a few more mushrooms and toast them in a little oil until they look delicious.

Blend the soup until smooth.

Add 150ml of cream to the blended soup.

Check for salt and pepper to taste.
