Stack 12 eggs on the rack in the Instant Pot.

Close the lid and ensure the knob is set to ceiling.

Set the Instant Pot to manual for 5 minutes.

While the eggs are cooking, prepare the cucumber salad by adding 1/3 cup of sugar to a bowl.

Add 2 cups of water and 2 cups of apple cider vinegar to the bowl with sugar and mix.

Taste the mixture and adjust sugar if needed.

Peel the cucumbers using a knife instead of a vegetable peeler.

Slice the cucumbers and add them to the vinegar mixture.

Slice a purple onion into semi-circles and add to the cucumber salad.

Mix the salad ingredients together and let sit.
