Provide a mixing bowl and prepare all the ingredients like Neapolitan flour type 00, water, salt, and dried yeast.

In the mixing bowl of water, add in the salt, mix with hand until dissolved. After that, add 3 handfuls of flour in, mix it, then add 1/2 tsp of dried yeast and mix to well combine. After all mixed, add the remaining flour and mix again to well combine, kneading for 5 minutes in the bowl.

After 5 minutes of kneading, dust the surface work place with flour, transfer the batter in and knead for another 20 minutes. Total kneading is 25 minutes. Make a big ball of the dough, put it in the bowl that was floured with olive oil, then cover with plastic wrap and let it rest for 2 hours at room temperature.

After 2 hours of rest, place the dough on the work surface and divide it into 3 equal pieces, making a ball. Place it in food containers dusted with flour (can use a baking tray also) and let it rest for 6 hours at room temperature with a lid cover.

After 8 hours of rest, preheat the oven to 250°C for 30 minutes with a pizza stone inside the oven. Take one dough and flatten it with a baking paper below, brushing with olive oil first, then apply the seasoned tomato sauce and the filling.

Place the pizza in the oven at the top level and bake for 15 minutes, then bring it to the bottom level for another 7-10 minutes to cook the bottom side.
