Neapolitan Pizza originated in Naples, Italy, in the late 18th century, becoming a staple of Italian cuisine. It reflects the region's rich agricultural heritage, with simple, high-quality ingredients like tomatoes, mozzarella, and basil. Traditionally cooked in a wood-fired oven, this pizza is celebrated for its soft, chewy crust and fresh toppings. Today, Neapolitan Pizza has gained global popularity, inspiring countless variations while maintaining its classic roots.

Nutritional yeast is a dairy-free alternative, while pecorino can be less expensive.
Add 390 g water to a bowl.
Add 1 g dry yeast to the water and mix well.
Add half of the 600 g bread flour to the mixture to reach a batter consistency.
Add 17 g Himalayan salt to the mixture and mix well.
Add the remaining flour and ensure all the water is absorbed without kneading.
Scrape the bowl's sides and let the dough rest for 15 minutes.
Perform the first stretch and fold of the dough after 15 minutes.
Let the dough rest for another 15 minutes and perform the second stretch and fold.
Repeat the process for a third stretch and fold after another 15 minutes.
Prepare containers with oil spray and divide the dough into four equal parts without a scale.
Shape each piece into a ball, sealing the bottom well, and let them rest at room temperature for 2 hours.
Refrigerate the dough overnight for flavor development.
The next day, take the dough out of the fridge while preheating the oven.
Dust the work surface with semola flour.
Press down the dough towards the crust, leaving a 0.5 to 1 inch border.
Move excess flour aside to prevent sticking and burning in the oven.
Add ice cubes to the oven to keep the dough moist and prevent burning on top.
Drizzle olive oil over the stretched dough.
Bake the pizza for 90 seconds at 750°F (400°C) or for 6-7 minutes at 500°F (260°C) in a domestic oven.
Remove the pizza from the oven and add toppings: arugula, cherry tomatoes, fresh mozzarella, and fresh basil.
