Roasted Garlic

1 whole head of garlic
1 teaspoon olive oil

Cut the tip off the head of garlic to expose the cloves.

Take a 6x6 piece of foil and place the garlic cut side up in the center.

Drizzle about 1 teaspoon of olive oil over the garlic.

Sprinkle a little kosher salt on top.

Wrap the garlic in the foil to create a pouch.

Place the wrapped garlic on a rimmed baking sheet with other items (sweet potatoes) and cook for 40 minutes at 350°F.

Open the foil and check the garlic; it should be super soft.

Squeeze the roasted garlic out of the skins onto a baking sheet to avoid any shells mixing in with other food.

Rinse hands to remove sticky garlic shells.

Mash the roasted garlic and ensure there are no shells remaining.
