Roasted Garlic

1 large bulb of garlic

Preheat the oven to 130 degrees Celsius.

Place the large bulb of garlic on a piece of parchment paper.

Add fresh bay leaves to the garlic.

Sprinkle coriander seeds over the garlic (optional).

Add salt to taste over the garlic.

Drench the garlic in extra virgin olive oil until it almost covers it.

Seal the parchment paper around the garlic and place it in an oven-proof band or baking tray.

Place the sealed garlic in the oven and roast for 2 hours at 130 degrees Celsius.

After roasting, allow the garlic to cool completely for about 1 hour.

Transfer the slow roasted garlic into an airtight container, including the extra virgin olive oil.
