Roasted Garlic

2 whole garlic heads

Preheat the oven to 400°F.

Remove any loose paper from the outside of each garlic head.

Hold the root end of the garlic head and cut away about 1/4 inch from the pointy end to expose the cloves.

Place each garlic bulb on a separate sheet of aluminum foil.

Drizzle about 1 tablespoon of olive oil over the exposed cloves of each garlic head.

Sprinkle a pinch of salt over the top of each garlic head, ensuring the salt touches the cloves.

Curl up the edges of the foil to create a bowl around the garlic head.

Add 2 tablespoons of water into the bowl created by the foil around each garlic head.

Carefully bring up the edges of the foil to seal it, ensuring the opening is at the top to prevent liquid from leaking out.

Place the wrapped garlic heads on a baking sheet and bake in the oven for 55 minutes.

Check the garlic at 45 minutes to ensure it is not burning.

After 55 minutes, check the garlic; it should be fragrant and caramelized, with the exposed cloves being dark tan to light brown.

If desired, add another 5 minutes for darker caramelization.

Allow the garlic to cool for about 15 minutes until it is safe to handle.

Squeeze the roasted cloves out of their paper wrapping, or pull them out individually if needed.
