Desiccated Coconut 90g (1 cup)
Warm water 60ml (¼ cup)
Brown Sugar 100g (½ cup)
Water 60ml (¼ cup)
Dates - 250g - Chopped
Nuts - 200g (i used pistachios and almond flakes) - chopped
Glazed Cherries - 100g - halved
Raisins/ Dried Cranberries - 200g
Lemon zest - 1 tablespoons
Candied peels 2 tablespoons
Crystallised ginger 2 tablespoons
Vanilla extract - 2 teaspoons
Spices - 1 tablespoon (i used Cinnamon, All spice, Ginger powder)
Golden syrup / honey 3 tablespoons
Brandy 60ml (¼ cup) optional
2 Eggs (lightly beaten)
Melted butter 110g (½ cup)
Plain Flour 150g (1 cup)
Baking powder 1 teaspoon
Baking soda ½ teaspoon

Add warm water to the coconut, mix and set aside.

Let the brown sugar caramelise over medium heat.

When it starts to caramelise, add the water and mix well.

Now add the coconut in and mix well.

Take off from the heat and put into a bigger bowl.

Add all the ingredients in the fruit mix into the same bowl and mix well.

Cover and keep this to rest for 1-2 hours.

Then add all the cake ingredients into the same bowl and mix well.

Line the baking pan with 2-3 layers.

Add the cake batter in and level the top.

Bake in a preheated oven at 160°C (320°F) for 1 and ¼ hours - 1 and ½ hours.

Let it cool completely.
