Balaleet

Balaleet is a traditional dish from Qatar, often enjoyed for breakfast or during special occasions. 400 gms pasta vermicelli
1 tbsp oil
5 cups water or as required
12 tbsp sugar or to taste
4 tbsp ghee / butter
1/2 tsp green cardamom powder
1/4 tsp saffron
1 tbsp water
2 eggs
2 pinch salt

In a pan, add oil and add vermicelli (seviyan) & roast for 2 – 3 mins.

Add water and bring it to boil.

Cook for 5 mins until vermicelli boiled.

After boiled, strain the water & set aside.

In a small bowl, add saffron and water and mix it. Set aside.

In a pan, add ghee or butter and also add boiled vermicelli (seviyan), green cardamom powder, sugar and cook until sugar dissolves.

Add saffron water and cover & cook for 5 mins on low flame.

After that, mix it well and transfer into a tray.

In a bowl, add eggs and pinch of salt and whisk it well.

In a frying pan, add ghee or butter and add whisked eggs and fry on both sides.

Serve vermicelli with omelette on top.
