1

Cut 2 sticks of green onion into strips.

2

Cut 2 big pieces of boneless and skinless chicken thighs into small strips.

3

Put the chicken into a container. Add 3 tablespoons of oyster sauce, ⅛ teaspoon of salt, 2 tablespoons of soy sauce, ½ tablespoon of sugar, and 2 teaspoons of cornstarch.

4

Mix it well and let it marinate for at least 15 minutes before cooking.

5

Boil some water in a pot until bubbling. Add 2 blocks of yi mein noodles (8 oz) and let it cook for 2-3 minutes. Turn off the fire and cover the lid, waiting a couple of minutes. After that, drain the water and set the cooked yi mein noodles aside.

6

Pour ½ tablespoon of vegetable oil into a pan over medium-high heat. Add 3 cups of washed sprout beans and 1/16 teaspoon of salt. Stir fry for a couple of minutes, then set aside on top of the noodles.

7

Pour ½ tablespoon sesame oil into a pan over medium-high heat. Add the marinated chicken and 2 ginger slices. Stir fry the chicken until cooked.

8

Add ¾ cup of water and keep stirring until the chicken is cooked. Turn off the fire. You can add green onion to the chicken and sauce now or as a topping later. Pour the cooked chicken and sauce over the sprout beans and noodles.
