Marinate chicken with 1 teaspoon salt, 0.5 teaspoon black pepper, and 0.5 teaspoon red chili powder for 2 hours.

Fry Irish potatoes colored with orange food color in hot oil over medium heat and set aside.

Add the grilled chicken and salt to taste, then let simmer on low heat for about 20 minutes until oil separates from the stew.

Add fried potatoes and most of the caramelized onions, mix, and cook for 5 more minutes before garnishing with chopped coriander.

For the rice, bring water to a boil and add cinnamon sticks, cardamom pods, cloves, rice, and salt to taste.

Add raisins and food color diluted with water, then add ghee and remaining caramelized onions on top, cover, and cook until ready.

Fluff the rice with a fork and serve with kachimbari, an egg, coriander, and chili on the side.
