1 pound French bread loaf
3/4 cup unsalted butter
1 1/2 cups diced celery
1 large sweet onion
a few cloves of fresh garlic
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground pepper
1 tablespoon mixed Italian seasoning (oregano, thyme, rosemary, sage)
2 cups chicken broth

Cut the French bread loaf into cubes or chunks.

If using fresh bread, dry it out by placing it on a sheet pan in the oven at 200 degrees Fahrenheit for about 40 minutes, rotating the pan halfway through.

In a large skillet on medium heat, melt 3/4 cup of unsalted butter.

Add 1 1/2 cups of diced celery and 1 large sweet onion to the skillet, along with a few cloves of fresh garlic.

Cook the vegetables, stirring occasionally, for about 10 to 15 minutes until soft.

Add 1/2 teaspoon of garlic powder, 1 teaspoon of salt, 1 teaspoon of ground pepper, and 1 tablespoon of mixed Italian seasoning to the skillet and mix well.

Remove the skillet from heat and transfer the cooked vegetables to a larger bowl with the dried bread cubes.

Add 2 cups of chicken broth to the bread and vegetables and stir until the bread soaks up the liquid.

In a separate bowl, whisk together 1 cup of chicken broth and 2 eggs.

Add the egg mixture to the stuffing and mix until everything is well coated.

Grease a 13 by 9 pan with cooking spray or butter and transfer the stuffing into the pan, spreading it out evenly.

Preheat the oven to 350 degrees Fahrenheit.

Cube the remaining 1/4 cup of butter and place it on top of the stuffing.

Cover the pan with foil and bake for 40 minutes at 350 degrees Fahrenheit.

Remove the foil and bake for an additional 40 to 45 minutes until the top is golden brown and crispy.
