Endive Soup

2 endives
1 cup of chopped carrot
1 cup of chopped onion
1 cup of chopped sweet pepper
3/4 cup of chopped celery
1 cup of chopped tomatoes
1/2 to 1 cup of chopped parsley
a small piece of ginger
oil
1 tsp pepper
1 tsp turmeric
1 tsp paprika
salt
2 to 3 tbsps. of strained tomatoes
boiling water
1/2 cup vermicelli

Chop the endives, carrots, onion, sweet pepper, celery, tomatoes, and parsley.

Grate or finely chop the ginger.

In a pot, heat some oil and sauté the chopped vegetables along with the ginger until softened.

Add the pepper, turmeric, paprika, and salt to the pot and stir well.

Pour in the strained tomatoes and mix thoroughly.

Add boiling water to the pot and bring to a simmer.

Add the vermicelli and cook until tender.
