300 g bacon
300 g kimchi
1.5 tbsp gochugaru (Korean chili pepper flakes)
1 tbsp soy sauce
1.5 tbsp oyster sauce
0.5 tbsp sesame oil
1 tsp sugar
5 green onions
1 tbsp oil
butter or toasted sesame oil (for finishing)

Wash 2 cups of short grain rice about three times and soak in cold water for at least 30 minutes.

In a container, mix 2 cups of water with 0.5 tbsp of dashida (Korean beef stock powder).

Thinly slice 300 g of bacon.

Cut 300 g of kimchi into small bite-sized pieces.

Season the kimchi with 1.5 tbsp of gochugaru, 1 tbsp of soy sauce, 1.5 tbsp of oyster sauce, 0.5 tbsp of sesame oil, and 1 tsp of sugar, and mix well.

Thinly slice 5 green onions, separating the whites from the greens.

Heat 1 tbsp of oil in a pot over medium-high heat, then add the bacon and cook for 5 to 6 minutes until golden brown.

If there's too much fat in the pot, remove some with a paper towel, leaving about 2 to 3 tablespoons.

Add the seasoned kimchi and the whites of the green onions to the pot and sautรฉ for 3 to 4 minutes until the kimchi is wilted down.

Add the drained rice to the pot and stir for about 1 minute to soak up the flavors.

Pour in the seasoned water and stir until it starts to boil, scraping up any bits stuck to the bottom.

Once boiling, reduce the heat to low and let it steam for 15 minutes without lifting the lid.

After 15 minutes, remove from heat and let it steam for another 10 minutes without opening the lid.

Sprinkle the greens of the green onions on top and finish with a pat of butter or a drizzle of toasted sesame oil.
