Prepare black beans by soaking them overnight in water.
Drain and rinse the soaked black beans.
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion, garlic, and bell pepper; sauté until softened, about 5 minutes.
Stir in diced tomato, cumin, and paprika; cook for 2-3 minutes.
Add soaked black beans, bay leaves, and enough water to cover the beans.
Bring to a boil, then reduce heat and simmer until beans are tender.
In the last 30 minutes, add diced smoked sausage, carrots, and potatoes.
Season with salt and black pepper to taste.
Remove bay leaves before serving.
Garnish with chopped cilantro and a squeeze of lime juice.
