Ghana Spinach Stew

2 cups spinach
1 cup Brussels sprouts
1 cup diced squash bell pepper
3 cloves garlic
1 tablespoon ginger
1 medium onion
1/2 cup zumi palm oil
1/2 cup fermented fish
2 cups diced tomatoes
1 can (5 oz) tuna
2 large eggs
1/4 cup melon seeds
1 teaspoon salt
2 seasoning cubes bed complete seasoning
1 teaspoon all-purpose seasoning
1/4 cup shrimp tamlet
1 cup mushrooms

Cut the spinach into smaller pieces.

Transfer spinach into a saucepan and boil with Brussels sprouts.

Blend squash bell pepper, garlic, ginger, and onion until smooth.

Drain the spinach and Brussels sprouts and set aside.

Heat zumi palm oil in a saucepan.

Add fermented fish and fry for about 2 minutes.

Add onion and fry until golden brown, about 2 minutes.

Add blended garlic, ginger, and onion mixture, stir and simmer for 5 minutes.

Blend tomatoes until smooth and add to the saucepan, stirring well.

Cover and allow to simmer until water is almost dried out, stirring periodically.

Add tuna in some oil and stir until combined, cover and simmer.

Crack 4 eggs into a bowl, then blend with melon seeds and salt.

Add the blended eggs and melon seeds back to the saucepan and stir.

Allow to simmer for 5 minutes.

Add chopped mushrooms and stir, cover and cook for 5 minutes.

Add the boiled spinach and Brussels sprouts, stir again.

Add bed complete seasoning, all-purpose seasoning, and shrimp tamlet, stir until incorporated.

Lower the heat and allow to simmer until ready.
