In a large bowl, add 2.5 cups of fresh blueberries, 1.5 tablespoons of cornstarch, 0.5 teaspoon of salt, 0.5 cup of loosely packed brown sugar, and the juice of half a lemon (about 1 tablespoon).
Mix the blueberry filling until combined.
Lay out a sheet of puff pastry on a sheet of parchment paper.
Brush a 1-inch border around the corners of the puff pastry with water.
Place the blueberry filling in the center of the pastry, avoiding the moistened edges.
Cover with another sheet of puff pastry and pinch the edges to seal.
Use a fork to create a decorative edge around the sealed pastry.
Place the pastry in the freezer for 15-30 minutes to set.
Preheat the oven to 375°F.
Remove the pastry from the freezer and place it on a baking sheet.
Brush the top with an egg wash (1 egg mixed with water and a little sugar).
Sprinkle granulated sugar on top of the pastry.
Bake in the preheated oven for 35-45 minutes until golden brown and puffy.
Let the pastry cool thoroughly before glazing.
In a bowl, mix 2 cups of powdered sugar with 1 teaspoon of vanilla extract and 1 tablespoon of water until desired consistency is reached.
If the glaze is too thick, add water a teaspoon at a time until it loosens up.
Once the pastry has cooled, drizzle the glaze generously over the top.
