Today, Pączki have gained popularity beyond Poland, especially in the United States, where they are celebrated on Mardi Gras and other festive occasions.

Break up fresh yeast into a bowl.
Add 1 tablespoon of sugar and 1 cup of warm milk to the yeast and let it activate.
Add 1.5 cups of bread flour to the yeast mixture and mix until combined; let rest for at least 30 minutes.
In a large bowl, beat 6 egg yolks and 1 whole egg with 0.5 cup of sugar until white and fluffy for about 2-3 minutes.
Add the yeast starter to the egg mixture and stir to combine.
Add 6 cups of bread flour, 3/4 cup of warm milk, zest and juice of 1 lemon, 1 teaspoon of vanilla extract, 3.5 ounces of melted butter, a pinch of salt, and 3.5 tablespoons of high volume alcohol to the mixture.
Mix until combined, then knead by hand until smooth, about 10 minutes.
Cover the dough and let it rise in a warm spot until doubled in size, about 1.5 hours.
Roll out the dough and cut into circles; let rise for another 15-30 minutes before frying.
