Pączki Kujawskie

Cultural Context

Originating from the Kujawy region of Poland, Pączki Kujawskie are a beloved treat traditionally enjoyed during Fat Thursday, marking the end of the carnival season. These sweet, filled doughnuts symbolize indulgence before Lent, and families often gather to make and share them. Today, pączki have gained popularity beyond Poland, celebrated in various cultures, especially in the United States, where they are often featured in bakeries during Mardi Gras.

1

Mix 1.5 cups all-purpose flour, 1/4 cup sugar, 1/4 teaspoon salt, and 1 package of instant yeast in a mixer.

2

Add 2/3 cup of milk heated to 120-130°F, 3 tablespoons of canola oil, 2 egg yolks, and 1/2 teaspoon of vanilla extract to the dry ingredients.

3

Mix for about 2 minutes until the dough is liquidy.

4

Add about 1/4 cup of additional flour to thicken the dough until it can be kneaded.

5

Knead the dough for about 50 turns until smooth and elastic.

6

Cover the dough with plastic and let it rest for 10 minutes.

7

Roll the dough out to about 1/2 inch thick on a floured surface.

8

Use a 2.5-inch round cutter to cut out circles of dough and place them on a parchment-lined baking sheet.

9

Cover the dough with a cloth and let it rise in a warm place for about 45 minutes.

10

Prepare custard filling by whisking together 1/4 cup sugar, 1 tablespoon corn starch, and 1 cup of 1% milk in a saucepan.

11

Add 1 egg yolk to the mixture and heat on medium-high until it thickens and comes to a boil, stirring constantly.

12

Once thickened, cool the custard before filling the pączki.

13

After 45 minutes, bake the pączki in a preheated oven at 375°F for 10 minutes.
