Add water to the hole to create steam, then cover the hole completely with soil.
Bake the chicken underground for about 2-3 hours, ensuring it cooks evenly.
Carefully uncover the hole and remove the chicken from the soil and leaves.
Serve the chicken hot, garnished with fresh coriander.
