Rwandan Cassava Fufu

Bananas provide sweetness and are widely available.
Add water into the ground cassava just above the level of the cassava.
Stir well until all lumps become soft and running.
Transfer the mixture into a bowl, squeezing out the cassava.
Let it stand until the water rises, leaving the cassava at the bottom.
After about two hours, remove the water from the cassava.
Give it a good stir and transfer it into a cooking pan.
Add a bit of salt and stir again.
Set fire from high to medium and place the cassava on the fire.
Wait for a couple of minutes until it starts to bubble, then stir frequently.
Create a well in the cassava and add some water, then cover it and reduce the fire to low.
Let it steam cook for at least five minutes, stirring slowly.
After five minutes, stir faster until smooth and check if it's cooked by tasting it.
Once cooked, serve it straight or shape it in foil to cool down for later storage.
