Cut 1.5 to 2 pounds of brisket from a larger piece.
Place the brisket in an electric pressure cooker.
Add 5 cloves of garlic, 1 green bell pepper, and onion pieces.
Pour in cold water (or hot water for faster cooking).
Seal the pressure cooker and cook for 35 minutes.
After 35 minutes, release the pressure slowly and check the meat.
Remove the meat and let it cool before shredding.
Shred the brisket using forks or meat shredders.
In a skillet, heat oil and sauté chopped green bell pepper, half an onion, and 2-3 tomatoes with 5 cloves of garlic.
Add the shredded meat to the sautéed vegetables and mix well.
Season the mixture with Worcestershire sauce, vinegar, and homemade achiote paste.
Add complete seasoning and 2-3 cups of the broth from cooking the meat.
Stir everything together and let it cook for another 12-15 minutes.
In another skillet, heat oil and add chopped onion and green bell pepper.
Add 1.5 cups of cooked beans and fry with the vegetables.
Use a food processor to blend the beans until smooth, adding sour cream for flavor.
Prepare homemade tortillas by cutting them into quarters.
Fry the tortilla pieces in hot oil until crispy, then place them on paper towels to drain excess oil.
Use nacho cheese or cheddar cheese for melting over the nachos.
Prepare an avocado by cutting it and removing the seed.
Layer the nachos on a long plate, starting with a base of fried tortillas.
Add shredded cheese, then the blended beans, followed by the shredded meat.
Top with pico de gallo and sour cream, repeating the layering process for at least five layers.
