1

Bring 4 lbs of russet potatoes to a boil in a large pot.

2

Add boiling water to the green outer leaves of one cabbage, removing the tough core.

3

Gently simmer the cabbage for 3 to 5 minutes until it just starts to wilt, ensuring it doesn't turn to mush.

4

Thoroughly drain the cabbage and return it to the saucepan, adding 3 tbsp butter and covering it without heating.

5

Once the potatoes are soft, drain them and return them to the pot, keeping the heat on for about 1 minute to evaporate any remaining liquid.

6

Turn off the heat and add 1 cup milk, 4 tbsp butter, and 5 chopped green onions to the potatoes.

7

Mash the potatoes three to four times around the pot, being careful not to overdo it.

8

Add the buttery cabbage to the potatoes and mix everything together.

9

Season with salt and pepper to taste, adding about 1 tsp salt and 1/4 tsp white pepper.

10

Prior to serving, add 4 tbsp butter and let it melt a bit before enjoying.
