Cook 8 oz of back bacon in a skillet until crispy.
Steam 3 lb of russet potatoes in a large pot with a steam basket for about 40 minutes until tender.
Peel the potatoes while still hot and chop into rough pieces.
Boil water in a separate pot and add 1.5 heads of chopped green cabbage with 2 tablespoons of butter, cooking until tender (about 2 minutes).
Drain the potatoes and return them to the pot to evaporate excess moisture.
Mash the potatoes, adding 8 oz of Irish butter and mixing until desired creaminess is achieved.
Add 1/2 cup of chopped green onions, salt, and black pepper to taste, mixing until combined.
Fold in the crispy bacon into the potato mixture and serve hot.
