Slice 2.5 pounds of russet potatoes into about 1-inch thick pieces, leaving the peel on for extra flavor and nutrition.
Add potatoes and 5 cloves of chopped garlic to a pressure cooker with 1 cup of water.
Cook in the pressure cooker for 8 minutes until tender.
Render center cut bacon in a 12-inch cast iron skillet until crispy, then remove bacon and reserve the fat.
Chop red cabbage and add it to the skillet with a splash of apple cider vinegar and a little salt, cooking until wilted but still crunchy.
Mash the cooked potatoes with 1 stick of butter and 0.5 cup of heavy cream using a potato masher for a fluffy texture.
Combine the mashed potatoes with the cooked cabbage, crispy bacon, and chopped scallions, stirring together.
