Collect leftover bread ends and buns in a Ziploc bag and freeze them.
Thaw the bread when ready to make breadcrumbs.
Cut or tear the thawed bread into smaller pieces.
Arrange the bread pieces on a baking sheet.
Toast the bread in the oven at 350°F for 10 to 15 minutes, stirring halfway through for even browning.
Remove the toasted bread from the oven and allow to cool.
Transfer the cooled bread pieces to a food processor and pulse until they turn into crumbs, adjusting the pulse time for desired crumb fineness.
For Italian style breadcrumbs, mix 1/4 cup Parmesan cheese, 2 tablespoons dried parsley, 2 tablespoons Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, and 1/2 teaspoon ground black pepper into 1 cup of plain breadcrumbs.
For Cajun style breadcrumbs, mix 1 teaspoon paprika, 1/2 teaspoon ground black pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/4 teaspoon cayenne pepper, 1 teaspoon oregano, 2 tablespoons dried parsley, and 1/2 teaspoon salt into 1 cup of plain breadcrumbs.
For garlic and herb breadcrumbs, mix 2 teaspoons dried minced garlic, 2 tablespoons dried parsley, 2 teaspoons Italian seasoning, 1/2 teaspoon salt, and 1/2 teaspoon ground black pepper into 1 cup of plain breadcrumbs.
Store the breadcrumbs in an airtight container.
