Grate 3 carrots finely.
Warm 1 cup of milk and 1 cup of water in the microwave.
Dissolve 4 teaspoons of dry yeast in the warm milk and water mixture.
Add 3 teaspoons of salt and 2-3 teaspoons of dark sugar to the mixture and mix well.
Add the grated carrots and 1 cup of oat flakes to the mixture.
Gradually add 2 cups of strong red flour to the mixture.
Add 2 tablespoons of olive oil and continue adding flour by hand until a dough forms, using up to 4 cups total.
Knead the dough for 5 to 10 minutes until smooth.
Let the dough rise for 1 hour until doubled in size.
Divide the dough into 20 equal pieces and shape them into rolls.
Cover the rolls and let them rise for another 20 minutes.
Preheat the oven to 425°F (220°C).
Bake the rolls for 10 to 13 minutes until golden brown.
