Peel and finely slice the cucumbers, then grate them into a large bowl.

Squeeze the grated cucumber to remove excess water.

Add 6 real tablespoonful thick yogurt into the bowl with the cucumber and mix.

Gradually add 1/2 cup cold water and whisk gently until you reach the desired consistency.

Add 1 tbsp dried mint flakes and mix well.

Sprinkle with 1/4 tsp salt and a tiny pinch of white pepper, then drizzle with olive oil and mix again.

If desired, add 3-4 cloves of minced garlic and mix.

Serve immediately with ice cubes or chill for a few hours before serving.
