1

Wash the oxtail with lemon or vinegar to remove any rawness.

2

Season the oxtail with fresh ingredients including thyme, scotch bonnet pepper, onions, garlic, and ginger.

3

Massage the seasonings into the oxtail and cover it to marinate for at least 9 hours or overnight.

4

Heat 2 tablespoons of olive oil in a pot until hot.

5

Sear the oxtail in batches for about 4 minutes on each side until browned.

6

Remove the seared oxtail and set aside.

7

Add onions, garlic, and carrot to the pot and sauté for 30 seconds.

8

Add water from a kettle to the pot, ensuring the oxtail is covered.

9

Cover the pot and cook on medium heat for about 2 hours, adding water as needed to keep the oxtail covered.

10

After 2 hours, check the tenderness of the oxtail; it should be almost falling off the bone.

11

Add remaining onions, sweet pepper, tomato, and carrot to the pot and stir.
