1 can (15 oz) butter beans
4 cups water

Wash the oxtail with vinegar and lime to remove excess water before seasoning.

Season the oxtail with 1 tablespoon mixed spice, 1 teaspoon parsley flakes, 1 teaspoon black pepper, 1 teaspoon all-purpose seasoning, 1 teaspoon paprika, 1 teaspoon cumin, cooking salt to taste, 1 tablespoon meat seasoning, 1 tablespoon Browning sauce, 1.5 tablespoons Browning sauce, 5 tablespoons onion, half of a big onion, 2 small sweet peppers, and 1 scotch bonnet pepper.

Rub in the seasoning and let the oxtail marinate for 20 to 30 minutes.

Heat 2 tablespoons of extra virgin olive oil in a pot until warm.

Add the marinated oxtail to the pot and cover it to cook for 20 minutes.

After 20 minutes, add 2 cups of water to the side of the pot to avoid washing away the color of the meat and let it cook for another 30 to 40 minutes, adding more water if necessary.

After 45 minutes, add 2 teaspoons of garlic cloves and let it cook for another 15 to 20 minutes.

Add a can of butter beans, some onions, and a little sweet pepper, and stir it in.

Let it cook for another 5 minutes, then cover it and simmer until finished.
