Trim excess fat from oxtail and wash it clean.

Season oxtail with salt and mixed seasoning, which includes paprika, dry thyme, parsley, jerk seasoning, garlic and herb seasoning, black pepper, chili flakes, and onion salt.

Add homemade green seasoning blend made from scallion, thyme, pimento peppers, garlic, parsley, and onions to the oxtail; mix well and marinate for 1-2 hours.

In a pot, heat a bit of oil and add brown sugar to brown the oxtail.

Once the sugar begins to brown, add the oxtail pieces one at a time, browning them for about a minute on each side.

Allow the oxtail to cook in its own juices for flavor before adding water.

After browning, pour enough water into the pot to cover the oxtail completely; bring to a boil, then reduce heat to the lowest setting.

Cook for about 2 hours until the meat is tender and falling off the bone, skimming off excess oil that rises to the surface.

Add mixed seasoning, ketchup, chopped onions, pimento peppers, scallion, and thyme to the pot; taste and adjust salt if necessary, adding a bit of sugar if desired.

Cover and cook for an additional 10 minutes, then remove the scallion and thyme sticks, and scotch bonnet pepper.

Add carrots and a tin of butter beans to the pot, mix in, cover, and cook for about 3 minutes.

Finally, add bell peppers and serve.
