Melt butter in a large pan.

Add the sliced cabbage, grated apple, light muscavado sugar, red wine vinegar, and water to the pan.
Stir everything together and cover the pan with a lid.
Cook gently for about an hour until the cabbage is tender.
After an hour, add a couple of tablespoons of red currant jelly to the cabbage and stir to combine.
