Remove the outer leaves of the red cabbage.
Slice the red cabbage into thin slices, using a knife or mandolin as preferred.
Peel, core, and slice the apples into desired shapes.
Melt 3 tablespoons of butter in a pot over medium heat.
Add chopped onion to the pot and sauté for about 5 minutes until softened.
Add the sliced apples to the pot and stir for about 1 minute.
Add 3 tablespoons of sugar to the pot and stir to combine, allowing it to caramelize slightly.
Introduce the sliced cabbage to the pot gradually, stirring to incorporate.
Add a splash of red wine and a splash of red wine vinegar to the pot.
Season with salt and black pepper to taste.
Add 2 bay leaves to the pot.
Cover the pot with a lid and simmer for about 45-50 minutes, stirring occasionally.
Check for tenderness in the cabbage, aiming for a little crunch.
Remove the bay leaves from the pot.
Stir in 1 tablespoon of red currant jelly or cranberry sauce and 2 tablespoons of apple sauce.
Turn off the heat and mix thoroughly to combine all ingredients.
