Remove the tatty outside leaves from the whole red cabbage.

Slice the red cabbage in half and finely slice it.

Slice the stalk of the cabbage in any way you prefer.

Heat a casserole style pan over medium heat and add the smoky bacon.

Fry the bacon with 1 tbsp of olive oil until it renders its fat and becomes golden.

Add 2-3 sprigs of rosemary to the pan with the bacon to make it crispy.

Remove the bacon and rosemary with a slotted spoon, leaving the fat in the pan.

Add a knob of butter to the pan with the bacon fat.

Add 2 tsp of fennel seeds to the pan.

Tear in a handful of prunes into the pan.

Add the sliced red cabbage and chopped apples to the pan.

Season with a pinch of salt and pepper.

Add 8-10 tbsp of balsamic vinegar to the pan.

Cover the pan with a lid and cook on medium heat for 25 minutes, stirring every five minutes.

After 25 minutes, check the color and texture of the cabbage.
