Prepare crepe batter by whisking together eggs, milk, flour, and salt until smooth.
Heat a non-stick skillet over medium heat and lightly grease with butter.
Pour a small amount of batter into the skillet, swirling to coat the bottom evenly.
Cook until edges lift and the bottom is lightly golden, about 1-2 minutes, then flip and cook for another minute.
Transfer cooked crepes to a plate and repeat with remaining batter, stacking them with parchment paper in between.
In a bowl, mix ricotta cheese, cream cheese, sugar, vanilla extract, lemon zest, and a pinch of salt until well combined.
Place a spoonful of cheese mixture onto the center of each crepe and fold the sides over to enclose the filling.
Heat butter in a skillet over medium heat and place filled crepes seam-side down in the pan.
Cook until golden brown, about 2-3 minutes per side, then transfer to a serving platter.
Dust with powdered sugar and serve with fruit preserves or fresh fruit.
