2 tbsp Salt
4 Tbsp vinegar
3 1/2 Tbsp crushed Mustard seeds
10 Garlic cloves, crushed
2 Tbsp Turmeric
1 Tbsp chilli flakes
7 Green chillies, chopped
1/2 Cup oil

Washed and clean all the veggies cut or shredded coarsely.

Sprinkle the salt and vinegar and let sit until it’s rendered all the water/liquid.

With a help of a cheesecloth or tea towel, drain out all the liquid then add them to a large mixing bowl.

To the vegetables, add the mustard, turmeric, chilli flakes, fresh chilli, oil, and crushed garlic and mix until well combined.

Reserve in a jar and keep in the fridge for up to 2-3 months.
