2 bags dry sorrel
2 thumb size pieces of ginger
1 tablespoon allspice
12 cups water
1 cup brown sugar
2 cups brown sugar
1 and 1/2 cups rum

Wash the dry sorrel in cold water, using a straining bowl to remove color.

Measure and add 12 cups of water into a pot.

Add sliced ginger and pressed ginger juice into the pot with water.

Turn the stove on high and bring the mixture to a rolling boil, then shut off the stove and cover the pot to steep.

Let the sorrel cool down overnight.

Strain the sorrel mixture, squeezing out the juice from the pulp.

Add 1 cup of brown sugar to the strained sorrel and stir to dissolve.

Taste the sorrel and add more sugar if needed, totaling 2 cups of brown sugar.

Add more ginger juice by squeezing additional ginger into the sorrel.

Measure and add 1 and 1/2 cups of rum to the mixture and stir.
